Cioppino’s was opened in 1999 by Pino Posteraro, originally from Lago in Calabria. Yaletown is one of Vancouver’s liveliest and most elegant neighborhoods, its old factories converted into bars, restaurants and shops. Pino’s menu ignores the stereotypes of Italian cooking abroad and focuses on creative dishes based on top-quality ingredients: fresh Pacific fish, house- aged cured meats, environmentally sound vegetables, shrimp and meat. Pappardelle with guanciale and porcini mushrooms is a must, but so are Pino’s splendid risotto and his magnificent prawns.
